2 lb. Butternut squash, peeled and cut into bite size pieces
2 Tablespoons olive oil
3 Tablespoons maple syrup, divided
Salt & pepper to taste
1 Tablespoon chopped chives (optional)
Spoon into a serving dish, top with a handful of chives, if desired, and drizzle with the remaining tablespoon of maple syrup. Makes approximately 4 - 6 servings.
